Dublin: Authentic Brewery Tour

About

The story of Rascals Brewing Company starts with a trip to New Zealand. A husband-and-wife team went over on holiday, fell head-first into the craft beer scene there, came home to Dublin, and decided to quit their jobs and build a brewery. It’s the kind of plan that sounds either brilliant or completely mad depending on how it turns out - and in this case, it turned out brilliantly.

You walk through the actual working brewery floor, up onto a mezzanine level where you can take in the full operation laid out below you. The tour starts in the Malt Room, where you get to grab handfuls of malted barley and taste the different specialty grains that give each beer its backbone. From there you move through the brewhouse - smelling the hops, watching the brewing vessels at work, and learning how each decision along the way shapes what eventually ends up in your glass. Art installations are dotted throughout the brewery, offering creative takes on the fermentation and conditioning process. They give the tour a visual character that goes well beyond stainless steel and pipes.

Then come the tastings. Four core beers, 190ml each, all brewed in the room you just walked through. Rascals has picked up multiple awards for their range, and tasting the beer metres from where it was made adds something no pub pour can replicate. If you want to extend the afternoon, Stillgarden Distillery is right next door and runs gin tastings that pair perfectly with the brewery tour.

Local Tips

Go hungry - or at least peckish. Rascals’ taproom serves pizza and bar food, and eating on site after the tour is a much better plan than heading straight home. You’ve just tasted four beers and seen exactly how they’re made - sitting down with a pizza in the taproom feels like a natural ending to the afternoon.

The Malt Room section is the highlight for a lot of people. There’s something satisfying about handling the actual raw ingredients and tasting the grains before you taste the finished beer. It changes how you think about what’s in your glass. Don’t rush through it.

Free parking makes it easy to combine with Stillgarden. Stillgarden Distillery is literally next door, and they run gin tastings that slot neatly after a brewery tour. If you’ve driven out to Inchicore, it makes a lot of sense to do both while you’re there. Give yourself a few hours for the full experience.

Ask about the seasonal and limited releases. The four tastings cover the core range, but Rascals regularly brews small-batch and seasonal beers that aren’t always on the main list. The guides tend to know what’s on and what’s coming, and they’re usually happy to talk through the full range if you’re curious.

Inchicore is more interesting than it looks on a map. The area around Rascals and Stillgarden has a neighbourhood feel that’s quite different from the tourist centre. If you’ve got time before or after, it’s worth a slow walk around rather than heading straight back into the city.
