Stillgarden does something no other distillery in Dublin can claim: they grow their own botanicals in the garden out back. The juniper, lavender, rosemary, and other plants that end up in your glass were picked from soil just metres from the still. It’s a small thing that makes a big difference to how they work - and it’s the reason this masterclass is more interesting than a standard distillery tasting.
The session walks you through Stillgarden’s full range of gins, each with a distinct botanical character. You’ll learn how they develop recipes, how different botanicals behave during the distillation process, and why growing their own ingredients gives them a level of control that larger producers simply can’t match. The team here are genuinely passionate about what they’re making, and the setting is intimate enough - maximum 22 people - that you can ask questions, handle the raw botanicals, and get a real sense of the journey from plant to pour.
It’s a brilliant option for group celebrations - hen parties, birthdays, stag weekends - or for anyone who loves gin and wants to go deeper than a standard bar tasting. Rascals Brewery is right next door, which means you can easily extend the afternoon into a craft beer session afterwards without moving your car.
Go out to the botanical garden before the tasting starts if you get the chance. Seeing the actual plants growing in the ground - the juniper, the lavender, the herbs - changes how you think about what’s in your glass. Most people skip it in their hurry to get to the tasting, but a few minutes in the garden is genuinely worth it.
The Luas Red Line gets you close without the parking headache. Inchicore isn’t far from the city centre, but driving and finding parking in Dublin is rarely fun. The Luas Red Line runs through the area, and Dublin Bus covers the surrounding streets. It’s easy enough to get there without a car - and more sensible if you’re planning to taste gin and then head next door to Rascals.

Stillgarden produces small-batch releases alongside their core range, and the masterclass is a good opportunity to try things you won’t find on back bars around the city. Do the brewery first, let the session settle, then head next door to Stillgarden for the gin masterclass. Rascals serves pizza in their taproom if you need something to eat in between. It’s an excellent afternoon.
