About This Tour

The Liberties is where Dublin’s drinking history was made - whiskey distilleries, porter breweries, and the cobbled streets that connected them. This 3.5-hour guided tour takes you through three proper stops that together give you a taste of what Ireland does best: a whiskey experience at Pearse Lyons Distillery, a gin school at Ha’Penny, and a pint poured at the Gravity Bar in the Guinness Storehouse. Itinerary

  1. The tour opens with a walk through Dublin’s Liberties - the neighbourhood that was once the beating heart of Irish whiskey production in the 18th and 19th centuries, and is now home to a genuine revival. (10 min)
  2. Pearse Lyons Distillery, housed in the beautifully restored former St. James’s Church. You’ll meet the distillers, explore the grain-to-glass distillation process, and sample 3-5 award-winning Pearse Irish Whiskeys, guided through the flavour profiles from blended to single malt. (60 min)
  3. The Gin School at Pearse Lyons Distillery, located in restored early 20th-century townhouses on the same grounds. You’ll explore the history of gin, get hands-on with botanicals, and taste three gins in front of a working copper pot still: Ha’Penny Original, Ha’Penny Rhubarb, and Míl Mediterranean Gin. (40 min)
  4. A short walk to St James’s Guinness Quarter, where your guide covers over 260 years of history and the neighbourhood’s ongoing development. (10 min)
  5. The Guinness Storehouse - seven floors of history, brewing craft, and Irish culture, in a building that has been brewing for over 250 years. The experience ends at the Gravity Bar with a perfectly poured pint and views across the city. (75 min)

Local Tips

Pace yourself at Pearse Lyons. You’re sampling 3-5 whiskeys before you even get to the gin school, which is an hour in. Eat something before you arrive - the distillery is in Thomas Street and there are good spots nearby for a quick bite beforehand.

The Ha’Penny gin session is more hands-on than people expect. It’s not just a tasting - you’re learning about botanicals and how they interact with the spirit. If you’re interested in gin, ask questions. The people running this know their stuff and enjoy the conversation.

Arrive at the Guinness Storehouse with time to breathe. The priority access means you skip the main queue, but the Storehouse itself has seven floors and the Gravity Bar is at the top. Work your way up rather than heading straight for the pint - the brewing history on the lower floors is genuinely interesting and gives the final pint more meaning.

The Liberties walk at the start sets the whole tour in context. This neighbourhood was producing whiskey on an industrial scale in the 1800s before the industry collapsed. The revival happening here now - Pearse Lyons, Teeling, and others - makes much more sense once you’ve heard that story on the street where it happened.
