What to Expect

GROW HQ is GIY’s purpose-built food and growing centre on the Dunmore Road in Waterford city, home to a cafe, a shop and a cookery school that runs a rotating programme of themed evenings through the year. This particular demonstration is built around turning a late-summer glut of vegetables and fruit into jars that keep through the winter. Chef Bruno, who grew up in Galicia in north-west Spain and now grows his own vegetables in Waterford, works through quick pickles, low-sugar jams and ketchups, fruity chutneys, fermented hot chillies and a classic sauerkraut, using organic produce from the GIY garden alongside produce from local growers. The session mixes technique with flavour ideas, covering fermentation as well as more familiar jam-and-chutney methods, and is framed around zero-waste cooking rather than any single cuisine. Bruno’s approach throughout leans on seasonal, locally sourced ingredients, and the demonstration is designed to leave attendees able to stock a home larder with preserves they made themselves rather than bought, using techniques that work equally well with a large kitchen garden or a few grow bags on a patio. As with GROW HQ’s other themed evenings, it runs as a demonstration with tasting included rather than a hands-on cooking class, and gives attendees a chance to ask Bruno questions about their own preserving projects at home.
