Every August, the quiet Georgian streets of Hillsborough fill up with shellfish, spectacle and a good deal of competitive eating. The Hillsborough International Oyster Festival has been running for over two decades and has grown into one of Northern Ireland’s best-known food events - a five-day celebration that takes over the village and draws visitors from across Ireland and further afield. It suits food lovers, families after a lively day out, and anyone who enjoys an event that has real character rather than a corporate sheen.

What to expect

The centrepiece is the World Oyster Eating Championship, where competitors race to consume as many Carlingford native oysters as possible in three minutes. The current world record stands at 235 oysters, set right here in Hillsborough. It is the kind of spectacle that draws a crowd whether you have any interest in competitive eating or not.

Beyond the championship, the festival spreads across the village with artisan food stalls, pop-up restaurants, street food and special menus in local pubs and restaurants. Live music and street entertainment run through the week. There is a Soapbox Derby, a Super Car Sunday and an Oyster Masters Golf Day for those who want more than food. The formal highlight of the week is the Pearl and Oyster Ball, a ticketed evening event with music and ceremony - the Oyster Pearl acts as hostess for the night.

Street events and the championship are free to watch. The Ball and some evening events are ticketed separately.

Getting there

Hillsborough is on the A1 Belfast to Dublin road, about 20km south of Belfast city centre - roughly a 25-minute drive in normal traffic. From Dublin, it is around two hours by road.

Translink buses from Belfast Europa Bus Centre serve Hillsborough, making it straightforward without a car. The village itself is compact and walkable once you arrive. Parking in the village centre is limited; additional car parks are signposted during the festival week, so arriving early or coming by bus saves a search.

While you’re in Hillsborough

Hillsborough itself is worth time beyond the festival - the village has a well-preserved Georgian core, a royal palace open to visitors, and a lakeshore forest park a short walk from the square. There is more to see in Hillsborough and across Co. Down.
