Meet the Cheesemaker: Cashel Blue Cheese

At Cashel Farmhouse Cheesemakers · Beechmount Farm, Fethard, Co. Tipperary

Wheels of Cashel Blue farmhouse cheese

Cashel Farmhouse Cheesemakers opens its Beechmount Farm gates near Fethard on Saturday 12 September 2026 for a two hour “Meet the Maker” morning with Sarah Furno, whose family has made Cashel Blue on the farm since the 1980s. The event is part of the Meet the Maker series run by the Centre of Food Culture Ireland, supported by Sheridans Cheesemongers, and pairs a working farm walk with a proper tasting of the finished cheese.

What to expect

The morning starts with a farm walk to see the herd whose milk goes into the cheese, before moving on to the aging rooms where the blue cheese develops its character. Sarah talks visitors through the cheesemaking process from milk and curds through to the finished wheels, explaining how flavour shifts with the seasons and what sets Irish farmhouse blue cheese apart from factory-made or imported versions. The session finishes with tastings of milk, curds and the farm’s full cheese range, so it works well for anyone curious about how a well-known Irish cheese is actually made, not just people who already know their cheese.
